Fall Harvest Chicken Salad

I was surprised when this recipe knocked my socks off, because I usually feel pretty ‘meh’ about chicken salad! This salad has amazing crunch from celery, chunks of fresh apple, bits of roasted pecans – mixed together to create a perfect light lunch wrap.

fall-harvest-chicken-saladThe surprising stars of this recipe are definitely the crunchy celery and sweet, tangy cranberries, I definitely wouldn’t skip these. I also really loved the dill, fresh herbs go so well with a light salad like this. I’m sure fresh parsley would make an excellent substitute as well.

It’s also incredibly easy to make; I used leftover rotisserie chicken so really all I had to do was chop the veggies and apple, then mix together. This would be a great recipe to use up all that leftover Thanksgiving turkey! (Can I say that now? It’s November so I feel like we can start talking about Thanksgiving.)

Fall Harvest Chicken Salad

This salad mixes together fall favorites like crisp apple and tangy cranberry for a crunchy, flavorful chicken salad.


  • 2 c. leftover rotisserie chicken
  • 1 c. chopped celery (1 stalk)
  • 3-4 green onions, sliced
  • 1/4 c. dried cranberries
  • 1/2 c. diced apple
  • 2-3 tbs roasted pecans or sliced almonds
  • 1/2 c. Greek yogurt
  • 2 tbs fresh dill
  • 1/2 tsp garlic powder
  • salt and pepper, to taste


  1. Mix all ingredients together.
  2. Serve with leafy lettuce on a wrap.
