I was surprised when this recipe knocked my socks off, because I usually feel pretty ‘meh’ about chicken salad! This salad has amazing crunch from celery, chunks of fresh apple, bits of roasted pecans – mixed together to create a perfect light lunch wrap.
The surprising stars of this recipe are definitely the crunchy celery and sweet, tangy cranberries, I definitely wouldn’t skip these. I also really loved the dill, fresh herbs go so well with a light salad like this. I’m sure fresh parsley would make an excellent substitute as well.
I love all the fall flavors in this recipe. It’s also incredibly easy to make; I used leftover rotisserie chicken so really all I had to do was chop the veggies and apple, then mix together. This would be a great recipe to use up all that leftover Thanksgiving turkey! (Can I say that now? It’s November so I feel like we can start talking about Thanksgiving.)
